Butterfly - The original Digimon 01 opening, is beautiful. Especially the piano version.

Byakuya ~ True Light ~ White Night - the opening for DN Angel, is also a good one. (Not to mention a lot of the characters are really cute!~ Hehe.)

Other than those, the openings of GitS:SAC 1 & 2, Lain, and FMA:B are all quality songs, Again by Yui, the first FMA:B OP, is an amazing song. But also, Period by Chemistry.
