Someone who knows more will probably correct me, but I understand "doujinshi" (or "dōjinshi) to mean amateur and derivative works, usually self-published, as opposed to "manga", which are original works done by professionals, and usually published by large publishing houses. A lot of doujinshi takes characters from existing manga, anime, or games, and puts them in a scene or story together. This is usually, though not always, romantic or sexual actions. That's pretty much what I think of myself when I hear the word, but there is more to it than that.

Like the English word "amateur", people often think of doujinshi as being unskillful, juvenile, or just "fan art". This is not always true, but even when it is, the "childish" nature of some doujinshi is part of its charm. But there are artists like Mentaiko whose work is as professional-looking as anything out there, and a real inspiration to us who are "amateurs" in every sense of the word.

There is a great deal of technical jargon in any field of art, and this one is no exception. Not only are a lot of the words taken from Japanese, but very often they don't mean quite the same thing in English as in Japanese. It's a little confusing, but as usual, the best way to learn the meanings of words is to pay attention to how people actually use them.
