Well, when my brain is running in Egghead mode, I'd have to say that the books I most enjoy reading over and over again are the collections of Stephen Jay Gould's essays, especially:
Eight Little Piggies
Hen's Teeth and Horse's Toes
Bully For Brontosaurus
I don't actually read a lot of fiction, for that I usually go for movies and TV series. Among the works of fiction that I really love, and re-read every so often, would be:
Lewis Carroll's Alice books
All four volumes of Douglas Adams' Hitchhiker's Guide to the Galaxy trilogy
Robert Anton Wilson's Illuminatus! (along with everything else he's ever written)
Jonathan Swift, Gulliver's Travels, A Modest Proposal, and A Tale of a Tub
Michael Ende, The Neverending Story
William Golding, Lord of the Flies
Vladimir Nabokov, Pnin
Theodore Sturgeon, More Than Human
Philip José Farmer's Riverworld series
My favorite book of all time, without question, is:
Maurice Sendak, Where the Wild Things Are
I refuse to see the movie version, just because I don't want to mess up my memories of that story.
As to authors whose works I like a lot generally:
Some of Stephen King's novels, like Salem's Lot, The Stand, The Shining, It, The Dark Half, and Thinner
Clive Barker's Books of Blood, Weaveworld, Imagica, and The Great and Secret Show
The H. P. Lovecraft collections put out by Arkham Press
Too many of Phillip K. Dick's novels to mention individually
Most of Harlan Ellison's short stories. The ominbus collection The Essential Ellison is the Bible of fiction to me.
There are others I could come up with if I gave it some thought, but these are the ones that quickly spring to mind. As a friend of mine said, looking over the titles on my bookshelves: "Don't you ever read any normal stuff?"

Yea, they never make you read any really GOOD stories in school :-X
It would take forever to list all my fav books. Though I usually read philosophy and science, but the occasional fiction too. Some of my favorite authors are Philip K Dick, Poe, Kafka, Carl Sagan, etc. I'm not a fan of Stephen King though :-X

I like the Maximum Ride series.
Shutter Island was a good book as well.
Oh, and of course, Hachiko Waits. I remember crying after I read that book as a kid.
Another addition is The Genius in All of Us. It's pretty much about how people aren't born as geniuses but raised as them because of the whole GXE instead of G+E thing (G=Genes, E=Environment). It takes a lot of work to be a genius.

I really love Brighton Rock by Graham Greene
If we are just talking about fiction novels then I also loved 'Let the Right One In' and 'Handling the Undead' by John Ajvide Lindqvist.
